🌶️ Smoky Paprika Chicken Omelet Loaded with Avocado
Ingredients — 1 large omelet
For the smoky chicken
- 120–150 g boneless chicken breast or thigh, finely diced
- 1 tsp smoked paprika
- ½ tsp regular paprika
- ¼ tsp garlic powder
- ¼ tsp onion powder
- ¼ tsp black pepper
- ¼ tsp salt, or to taste
- ½ tsp chili flakes or cayenne — optional
- 1 tsp lemon juice
- 1 tsp olive oil
For the omelet
- 3 large eggs
- 1 tbsp milk or water
- Pinch of salt
- Pinch of black pepper
- 1 tsp butter or olive oil
For the filling
- ½ ripe avocado, sliced or diced
- ¼ small onion, finely sliced
- ¼ cup bell pepper, diced
- 2 tbsp shredded cheddar or mozzarella
- 1 tbsp fresh coriander/cilantro, chopped
- 1 small green chili, sliced — optional
Optional finishing touches
- Extra smoked paprika
- Fresh coriander
- Squeeze of lime or lemon
- Hot sauce
- A spoonful of Greek yogurt or sour cream
Step 1 — Season the chicken
Place the diced chicken in a bowl.
Add:
- smoked paprika
- regular paprika
- garlic powder
- onion powder
- black pepper
- salt
- chili flakes, if using
- lemon juice
- olive oil
Mix thoroughly until every piece of chicken is coated in the deep red, smoky paprika seasoning.
Let it sit for 5–10 minutes while you prepare the other ingredients.
Step 2 — Cook the smoky chicken
Heat a non-stick skillet over medium-high heat.
Add the seasoned chicken in a single layer.
Cook for approximately 5–7 minutes, stirring occasionally, until the chicken is browned on the outside and completely cooked through.
You want little golden-brown, slightly charred edges because that’s where a lot of the smoky flavor comes from.
Once cooked, remove the chicken from the pan and set it aside.
Important: Chicken should reach 74°C / 165°F internally.
Step 3 — Cook the vegetables
Using the same skillet, add the sliced onion and diced bell pepper.
Cook for about 2–3 minutes.
You don’t want them completely soft. A little crunch gives the omelet a much better texture.
Add the green chili if you’re using it.
Return the cooked chicken to the pan and toss everything together for about 30 seconds.
Turn off the heat.
Step 4 — Prepare the eggs
Crack 3 eggs into a bowl.
Add:
- 1 tbsp milk or water
- a small pinch of salt
- black pepper
Whisk vigorously for about 20–30 seconds.
The mixture should be completely combined and slightly frothy.
Step 5 — Cook the omelet
Heat a clean non-stick skillet over medium-low heat.
Add 1 tsp butter or olive oil.
Once the butter melts, pour in the beaten eggs.
Immediately tilt the pan so the eggs spread into an even layer.
Let them cook gently for about 1–2 minutes.
As the edges begin to set, use a spatula to gently push the cooked egg toward the center while tilting the pan so the uncooked egg flows underneath.
Don’t cook it until it’s completely dry. The surface should still look slightly glossy and soft.
Step 6 — Add the smoky chicken filling
Spread the chicken, onion, and pepper mixture over one half of the omelet.
Sprinkle over the shredded cheese.
Let it cook for another 30–45 seconds, allowing the cheese to start melting.
Step 7 — LOAD IT with avocado 🥑
This is where the omelet gets especially good.
Add your sliced or diced avocado directly over the chicken.
Don’t mash it completely. You want big, creamy pieces of avocado throughout the filling.
Add some fresh coriander and, if you like heat, a few slices of fresh chili.
Step 8 — Fold the omelet
Carefully fold the empty half of the omelet over the filling.
Let it sit in the pan for another 20–30 seconds on low heat.
Then slide it onto a plate.
The ideal omelet should be:
soft and tender outside → smoky chicken in the middle → melted cheese → creamy avocado → slightly crunchy peppers.
Step 9 — Finish it
For the ultimate smoky finish, sprinkle a tiny amount of smoked paprika over the top.
Add:
- fresh coriander
- a squeeze of lime or lemon
- a few drops of hot sauce
For an extra creamy version, serve with a small spoonful of Greek yogurt on top or alongside.
