Weeknight breakfast burrito with Mexican-style chicken and hash browns

🌯 Mexican-Style Chicken & Hash Brown Breakfast Burritos

Ingredients

Mexican-style chicken

  • 500 g boneless, skinless chicken thighs or chicken breast
  • 1 tbsp oil
  • 1 tsp chili powder
  • 1 tsp paprika
  • ½ tsp cumin
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper
  • Juice of ½ lime
  • 1 tbsp chopped fresh cilantro, optional

Hash browns

  • 500 g frozen shredded hash browns or diced potatoes
  • 1½ tbsp oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp paprika

Eggs

  • 6 large eggs
  • 2 tbsp milk
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 1 tsp butter or oil

For the burritos

  • 4 large flour tortillas
  • 1 cup shredded cheddar, Monterey Jack, or Mexican-blend cheese
  • ½ cup salsa
  • ½ avocado, sliced or diced
  • 2–3 tbsp chopped cilantro
  • 2–3 tbsp sliced jalapeños, optional
  • ¼ cup sour cream or Greek yogurt, optional
  • 1–2 tbsp hot sauce, optional

Step 1: Season the chicken

Cut the chicken into small bite-sized pieces. This is better for burritos than cooking the chicken whole because it cooks quickly and gives you flavorful pieces in every bite.

Put the chicken in a bowl and add:

  • chili powder
  • paprika
  • cumin
  • garlic powder
  • onion powder
  • oregano
  • salt
  • black pepper
  • lime juice
  • 1 tbsp oil

Mix thoroughly until every piece is coated.

Let it sit for 5–10 minutes while you prepare the potatoes.


Step 2: Make the crispy hash browns

If using frozen shredded hash browns, don’t thaw them first.

Heat 1½ tbsp oil in a large nonstick or cast-iron skillet over medium-high heat.

Add the hash browns and spread them into an even layer.

Season with:

  • salt
  • pepper
  • paprika

Important: Don’t constantly stir them. Let them sit for about 4–5 minutes so the bottom becomes golden and crispy.

Flip or stir them, then cook another 4–6 minutes until they’re crisp and golden.

Transfer them to a plate.

If using fresh potatoes:

Dice them into small cubes, rinse them briefly, and dry them very well. Cook them in the same way, but allow roughly 12–15 minutes until tender and crispy.


Step 3: Cook the Mexican chicken

Use the same skillet to keep all those crispy potato flavors.

Add the seasoned chicken over medium-high heat.

Cook for about 6–8 minutes, stirring occasionally, until the chicken is browned and cooked through.

The chicken should have some nice browned edges.

Squeeze a little extra lime juice over it at the end and sprinkle with cilantro if you like.

Don’t overcook the chicken, especially if you’re using chicken breast. Thigh meat is more forgiving and stays juicier.

Remove the chicken from the pan.


Step 4: Scramble the eggs

Crack 6 eggs into a bowl.

Add:

  • 2 tbsp milk
  • salt
  • black pepper

Whisk until combined.

Reduce the skillet to medium-low heat and add 1 tsp butter or oil.

Pour in the eggs.

Let them sit for about 10–15 seconds, then gently stir with a spatula.

Continue slowly folding the eggs until they’re just cooked but still soft and slightly creamy.

Remove them from the heat immediately.

The eggs will continue cooking from their residual heat, so you don’t want them completely dry.


Step 5: Warm the tortillas

This makes a huge difference when rolling the burritos.

Place each tortilla in a dry skillet for about 10–15 seconds per side.

You can also microwave them under a slightly damp paper towel for about 15–20 seconds.

The tortilla should become soft and flexible, not crispy.


Step 6: Assemble the burritos

Place one warm tortilla on a flat surface.

Build the burrito in layers.

Add approximately:

  1. ½ cup crispy hash browns
  2. ¼ of the Mexican chicken
  3. ¼ of the scrambled eggs
  4. ¼ cup shredded cheese
  5. 2 tbsp salsa
  6. A little avocado
  7. Cilantro
  8. Jalapeños if desired
  9. A small spoonful of sour cream or Greek yogurt
  10. Hot sauce if you like heat

Don’t overfill it.

The biggest mistake with breakfast burritos is adding too much filling. You want enough space around the edges to fold and roll it properly.


Step 7: Roll the burrito

Fold the left and right sides of the tortilla inward over the filling.

Then fold the bottom edge up and over the filling.

While keeping the sides tucked in, roll the burrito forward tightly.

You should end up with a compact cylinder.

Repeat with the remaining tortillas.


Step 8: Toast the burritos 🌯

This is optional but highly recommended.

Heat a dry skillet over medium heat.

Place the burritos seam-side down.

Cook for about 2–3 minutes, then turn them and cook another 1–2 minutes.

The tortilla should become lightly golden and crisp.

This also seals the burrito so it doesn’t fall apart when you eat it.


🌶️ Quick Mexican-style sauce

For an extra flavorful burrito sauce, mix:

  • ½ cup sour cream
  • 2 tbsp salsa
  • 1 tbsp lime juice
  • ½ tsp chili powder
  • ¼ tsp cumin
  • hot sauce to taste
  • pinch of salt

Mix everything together.

Drizzle it inside the burrito or serve it on the side for dipping.


🔥 How to make it even better

For juicier chicken: Use chicken thighs instead of breast.

For extra crispy potatoes: Don’t overcrowd the pan and avoid stirring them too frequently.

For a cheesy center: Put the cheese directly on top of the hot chicken and eggs so it starts melting before you roll.

For more Mexican flavor: Add sautéed onions and bell peppers to the chicken.

For more heat: Add diced jalapeño, chipotle in adobo, or a few drops of your favorite hot sauce.

For a fresh contrast: Add pico de gallo, avocado, lime, and cilantro immediately before rolling.

🌯 Final combination

The ideal bite should give you crispy potatoes + juicy chili-cumin chicken + soft eggs + melted cheese + fresh salsa + creamy avocado, all wrapped in a lightly toasted tortilla.

For a weeknight meal, you can also make the chicken and hash browns ahead of time, refrigerate them, and assemble fresh burritos the next morning.
