Ingredients

For the chicken

  • 1½ lb (680 g) boneless, skinless chicken thighs or chicken breasts
  • 1 cup shredded sharp cheddar cheese
  • 1–2 fresh jalapeños, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • Juice of ½ lime

For the fresh salsa

  • 3 medium tomatoes, diced
  • ¼ small red onion, finely diced
  • 1 jalapeño, finely chopped
  • ¼ cup fresh cilantro, chopped
  • Juice of 1 lime
  • ¼ tsp salt
  • Black pepper, to taste

For serving

  • 8–10 small flour or corn tortillas
  • Extra shredded cheddar
  • Lime wedges
  • Fresh cilantro
  • Sliced avocado or guacamole, optional
  • Sour cream or Greek yogurt, optional

Step 1: Prepare the chicken

Pat the chicken dry with paper towels. This helps the seasoning stick and allows the chicken to brown properly.

Cut the chicken into small, bite-sized pieces. Smaller pieces cook quickly, making this recipe ideal for a weeknight dinner.

Place the chicken in a bowl and add:

  • Olive oil
  • Chili powder
  • Cumin
  • Smoked paprika
  • Salt
  • Black pepper
  • Minced garlic
  • Lime juice

Toss everything together until the chicken is evenly coated.


Step 2: Make the fresh salsa

While the chicken absorbs the seasoning, make the salsa.

Add the diced tomatoes, red onion, chopped jalapeño, and cilantro to a bowl.

Pour in the lime juice and sprinkle with salt and a little black pepper.

Mix gently.

Taste and adjust the seasoning. If you like more heat, add another little bit of jalapeño.

Tip: Let the salsa sit for 5–10 minutes. The lime juice will bring all the flavors together.


Step 3: Cook the chicken

Heat a large skillet over medium-high heat.

Add the seasoned chicken in a single layer. Don’t overcrowd the pan; if necessary, cook it in two batches.

Cook for about 4–5 minutes, stirring occasionally.

Turn the chicken and continue cooking until it is browned on the outside and completely cooked through.

The chicken should reach 165°F / 74°C internally.


Step 4: Add the jalapeño and cheddar

Reduce the heat to medium-low.

Sprinkle the chopped jalapeño over the cooked chicken.

Then add the shredded cheddar cheese.

Cover the skillet with a lid for 1–2 minutes.

The trapped heat will melt the cheddar over the chicken, creating a gooey, cheesy coating.

For extra flavor, give everything one gentle stir so the melted cheese clings to the chicken.


Step 5: Warm the tortillas

Heat a clean skillet over medium heat.

Warm each tortilla for approximately 20–30 seconds per side until soft and flexible.

You can also wrap several tortillas in foil and warm them in the oven.

Keep the tortillas covered with a clean kitchen towel so they stay warm while you assemble the tacos.


Step 6: Assemble the tacos

Place a warm tortilla on a plate.

Add a generous spoonful of the jalapeño cheddar chicken.

Top with plenty of the fresh tomato salsa.

Finish with any of your favorite toppings:

  • A squeeze of fresh lime
  • Fresh cilantro
  • Extra cheddar
  • Avocado
  • Sour cream
  • Pickled jalapeños
  • A little hot sauce

Fold the tortilla and serve immediately.


🔥 Easy Weeknight Tips

Use chicken thighs: They’re especially juicy and forgiving if you cook them a little longer.

Want more heat? Keep the jalapeño seeds and membranes, or add a pinch of cayenne.

Want it milder? Remove the seeds and use only half a jalapeño.

Make it even faster: Use pre-shredded cheddar and prepare the salsa while the chicken is cooking.

For crispy tacos: After filling the tortillas, place them in a lightly oiled skillet and cook for 1–2 minutes per side until golden and crisp.
