🧀 Creamy One-Pot Mac and Cheese

🕒 Time

  • Prep: 5 minutes
  • Cook: 15–20 minutes
  • Total: About 25 minutes
  • Servings: 4

🛒 Ingredients

  • 2 cups (200 g) elbow macaroni
  • 2 cups (480 ml) whole milk
  • 1 cup (240 ml) water
  • 2 tablespoons butter
  • 1 teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon black pepper
  • ½ teaspoon mustard powder — optional, but adds great flavor
  • 1½ cups (150 g) freshly shredded cheddar cheese
  • ½ cup (50 g) mozzarella cheese
  • 2 tablespoons cream cheese
  • ¼ cup (60 ml) heavy cream — optional, for extra creaminess

👩‍🍳 Step-by-Step Instructions

1. Add everything except the cheese

Place a large, heavy-bottomed pot or saucepan over medium heat.

Add:

  • macaroni
  • milk
  • water
  • butter
  • salt
  • garlic powder
  • onion powder
  • black pepper
  • mustard powder, if using

Give everything a good stir.

2. Bring it to a gentle simmer

Let the mixture heat until it begins to gently bubble.

Don’t use very high heat. Milk can scorch or boil over easily.

Once it starts simmering, reduce the heat to medium-low.

3. Cook the macaroni

Cook for about 8–12 minutes, stirring frequently.

The stirring is important because the pasta can stick to the bottom of the pot.

As the macaroni cooks, it will absorb the liquid and release starch. That starch helps naturally thicken the sauce and gives the finished mac and cheese its creamy texture.

If the liquid disappears before the pasta is completely cooked, add a small splash of milk or water and continue cooking.

4. Check the pasta

Taste a piece of macaroni.

It should be tender but still slightly firm—not mushy.

You want a little bit of liquid remaining in the pot when the pasta is finished. Don’t drain it.

5. Lower the heat

Once the macaroni is cooked, turn the heat to low or remove the pot from the burner for a minute.

This is important because adding cheese over very high heat can cause the cheese to separate and become greasy.

6. Add the cream cheese

Stir in the 2 tablespoons of cream cheese until completely melted.

The cream cheese makes the sauce extra smooth and creamy.

7. Add the cheddar

Add the shredded cheddar cheese gradually, about a handful at a time.

Stir continuously as each addition melts.

Don’t dump all the cheese in at once. Adding it gradually helps create a smoother sauce.

8. Add the mozzarella

Stir in the mozzarella and allow it to melt completely.

The mozzarella gives the mac and cheese a deliciously stretchy, gooey texture.

9. Add heavy cream

If you want an especially rich and creamy mac and cheese, stir in ¼ cup heavy cream.

Let everything gently warm together for about 1–2 minutes.

Don’t boil the sauce at this stage.

10. Adjust the consistency

Your mac and cheese should now be thick, creamy, and glossy.

If it’s too thick, add 1–2 tablespoons of warm milk at a time and stir.

If it’s too thin, let it sit over very low heat for another minute or two while stirring.

Remember that the sauce will become thicker as it cools.

11. Taste and season

Taste the mac and cheese and adjust the seasoning.

You can add:

  • more salt
  • extra black pepper
  • a little garlic powder
  • a pinch of paprika
  • more shredded cheese

12. Rest before serving

Turn off the heat and let the mac and cheese sit for 2–3 minutes.

This gives the cheese sauce time to thicken and cling to the pasta.

Then serve immediately while it’s hot and creamy. 🧀

⭐ Tips for Extra Creamy Mac and Cheese

Use freshly shredded cheese. Pre-shredded cheese often contains anti-caking ingredients that can prevent the sauce from becoming perfectly smooth.

Don’t boil the cheese sauce. High heat can make cheese separate and turn oily or grainy.

Stir frequently while cooking the pasta. This prevents sticking and helps the pasta cook evenly.

Use whole milk if possible. It produces a richer sauce than low-fat milk.

Want it even cheesier? Add another ½ cup of cheddar or a little Parmesan.

🌶️ Optional Add-Ins

You can easily customize it with:

  • Spicy: chili flakes or chopped jalapeños
  • Smoky: smoked paprika
  • Garlic: 1 minced garlic clove
  • Chicken: cooked shredded chicken
  • Vegetables: broccoli, peas, or sweet corn
  • Crunchy topping: breadcrumbs toasted in butter
  • Extra cheesy: cheddar + mozzarella + Parmesan

🍽️ Serving

Serve the mac and cheese immediately for the creamiest texture. It’s delicious as a main dish or alongside grilled chicken, burgers, roasted vegetables, or crispy chicken.

The key secret: keep the heat low once the cheese goes in, and add the cheese gradually. That’s what gives you that smooth, creamy restaurant-style sauce rather than a greasy or grainy one.
